Ingredients
200 g spaghetti
200 g smoked salmon sliced
1 bunch spring onions chopped
1 box cherry tomatoes sliced
1 bunch asparagus chopped
1 cup mushrooms sliced
1/2 zucchini small chopped
1 cup frozen peas
2 tbs capers
1/2 cup Tomato puree
1 lemon juiced
1 sprinkle fetta
1 handful basil chopped
1 pinch black pepper
Method of Preparation
Cook pasta in boiling water until al dente. While this is happening, heat a small amount of olive oil in a frypan, then add all vegetables and cook for about 5 minutes, until tender.
Add smoked salmon and Tomato puree, and cook for another few minutes until heated through.
Stir through drained spaghetti. Serve with lemon juice, fetta and black pepper to taste. Nice with the addition of chopped fresh basil too.
