Chicken in Potato Basket

Ingredients


6 large potatoes 


4 Chicken breasts


500g Mushrooms


2 Shallots

1 Avocado


200g Butter

Salt and Pepper

Chives for Garnishing



 

Method of Preparation


To prepare the potato baskets:

Peel the potatoes and grate them.

Season with salt and pepper.

Mix them together in a bowl

Clean the chicken breasts and roll them in a sausage shape. 

Let refrigerate at least 30 minutes.

Cut the chickens into thick slices.

Heat the oil and fry the potatoes.

Cook the chicken breasts with butter.

Chop the shallots, the avocado and the mushrooms.

Sauté them with butter and olive oil.
